Beefalo Tex-Mex Sloppy Joe

Southwest or Tex-Mex
chopped green sweet pepper
can tomato sauce
1 -1 1/2
Whole Kernel Corn
fresh or frozen
Chopped Chipotle in Adobo Sauce
Dash of bottled hot pepper sauce
kaiser rolls or hamburger buns
split and toasted
Sliced Cheddar Cheese
Or Pepper Jack
In a large skillet cook Beefalo, onion, and sweet pepper until meat is brown and vegetables are tender, stirring to break up any meat. Drain off fat.
Stir in tomato sauce, water, chili powder, Worcestershire sauce, garlic salt, corn, chipotle chile in adobo sauce and hot pepper sauce into Beefalo mixture in skillet.
Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally.
Serve on rolls with a slice of cheddar or pepper jack cheese.
